Cooking Steps

Cook rice

  • Before starting, lightly oil the grill. While you prep, preheat the grill to medium (approx. 400°F). Wash and dry all produce. 
  • To a medium pot, add stock powder, 1 1/4 cups (2 1/2 cups) water, 1 tbsp (2 tbsp) butter and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high. 
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice and half the Italian Herb Spice Blend. Reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.
Prep and make Caesar dressing

  • Meanwhile, zest, then juice lemon. 
  • Cut tomato into 1/4-inch pieces.
  • Snip one corner of crouton packet. Using a pot or rolling pin, crush croutons into pea-sized crumbs.
  • To a medium bowl, add mayo, Caesar dressing, Parmesan and lemon juice. Season with salt and pepper, stir to combine. (NOTE: This is your dressing mixture!)
  • To a large bowl, add 2 tbsp (1/4 cup) dressing mixture, tomatoes and spring mix. (NOTE: Don't toss until step 5.)
Prep and grill chicken

  • Pat chicken dry with paper towels.
  • Season chicken with salt, pepper and remaining Italian Herb Spice Blend. Drizzle with 1 tsp (2 tsp) oil. Flip to coat.
  • Gather chicken, a clean plate and tools on a platter, then head out to grill!
  • Add chicken to the grill. Reduce heat to medium, close lid and grill for 6-8 min per side, until chicken is cooked through.**
Finish chicken

  • When the chicken is done, spread remaining dressing mixture (from step 2) over top, then sprinkle with cheddar. Close lid and grill for 1-3 min, until cheese melts. 
  • Lightly press crushed croutons on the tops of chicken.
  • Transfer chicken to the clean plate and let rest for 2 min.
Finish and serve

  • Fluff rice with fork, then stir in lemon zest. 
  • Toss salad.
  • Divide rice, salad and chicken between plates.
