Cooking Steps

Prep chicken

  • Before starting, wash and dry all produce.
  • Pat chicken dry with paper towels. Cut chicken crosswise, into 2 equal portions.
  • Sprinkle garlic salt over chicken, then season with pepper.
Cook chicken

  • Heat a large non-stick pan over medium-high.
  • When hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook until 5-7 min per side, until golden-brown and cooked through.** 
  • Transfer chicken to a clean cutting board to rest for 2-3 min.
Prep

  • Cut tomato into 1/4-inch pieces. Season with salt and pepper.
  • Core, then cut apple into 1/4-inch slices.
  • Halve cucumber lengthwise, cut into 1/2-inch half moons.
Make dressing

  • To a large bowl, add mayo, vinegar, 1 tsp (2 tsp) sugar and 1 tbsp (2 tbsp) oil.
  • Season with salt and pepper. Whisk to combine.
Toss salad

  • To the bowl with dressing, add baby spinach, apples, tomatoes, cucumbers and carrots.
  • Toss to combine.
Finish and serve

  • Thinly slice chicken.
  • Divide salad between plates. Top salad with chicken.
  • Sprinkle feta over top.
