Cooking Steps

Cook rice

  • Before starting, to a medium pot, add 1 1/4 cups (2 1/2 cups) water and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high heat. 
  • Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear. 
  • To the boiling water, add rice. Cover and reduce heat to medium-low. Cook for 12-15 min, until rice is tender and water is absorbed. Remove from heat. Set aside, still covered.

  • Meanwhile, core, then cut pepper into 1/4-inch pieces. 
  • Strain pineapple.
  • To a medium bowl, add cornstarch, vinegar, brown sugar, chicken broth concentrate, soy sauce and 1/4 cup (1/2 cup) water. Whisk to combine, then set aside.  (TIP: For a lighter sauce consistency, add water, 1-2 tbsp at a time.)
Cook beef and peppers

  • Heat a large non-stick pan over high.
  • When hot, add beef and peppers to the dry pan. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains and peppers are tender-crisp.**
  • Carefully drain and discard excess fat.
  • Season with salt and pepper, then add Moo Shu Spice Blend and pineapple. Cook for 1-2 min, until fragrant and pineapple is warmed through. 
  • Meanwhile, roughly chop cilantro. 
Make sauce

  • Add brown sugar-soy sauce mixture to the pan with beef and veggies. Bring to a boil. Cook 1-2 min, stirring often, until sauce thickens slightly. Season with salt and pepper. (TIP: For a lighter sauce consistency, add water, 1-2 tbsp at a time.)
  • Remove from heat. 
Finish and serve

  • Fluff rice with a fork, then stir in half the cilantro. 
  • Divide rice between bowls, then top with beef and veggie stir-fry.
  • Sprinkle remaining cilantro over top.
