Cooking Steps

Prep
1
  • Before starting, wash and dry all produce.
  • Roughly chop spinach. (TIP: Place spinach in a bowl, then roughly chop using a pair of kitchen shears or scissors!)
  • Peel, then mince or grate garlic.
Cook sausage and veggies
2
  • Heat a large pot over medium-high.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then mirepoix. Cook for 1 min, stirring occasionally, until beginning to soften.
  • Add sausage. Cook for 4-5 min, breaking up sausage into smaller pieces, until no pink remains.** Season with salt and pepper.
Start soup
3
  • Add garlic, crushed tomatoes, Zesty Garlic Blend, stock powder and 3 1/2 cups (7 cups) water. Stir to combine. (NOTE: Scrape any browned bits from the bottom of the pot, this will add flavour!) Season with salt and pepper.
  • Cover and bring to a boil over high.
Cook tortellini
4
  • Once soup comes up to a boil, add tortellini. Cook for 2-4 min, stirring occasionally, until tender but still firm to the bite.
Finish soup
5
  • Reduce heat to medium. Stir in cream and spinach. Cook for 1 min, stirring often, until spinach wilts. Season with salt and pepper.
Finish and serve
6
  • Divide soup between bowls.
  • Sprinkle Parmesan over top.

Customer reviews

Review summary

Updated on Aug 2026
  • Flavour: Rich, hearty, and comforting, with a well-seasoned tomato-cream base that the whole family tends to enjoy. Some reviewers found it a touch bland or salty, so adjust seasoning to taste before serving.
  • Ease of prep: Quick and straightforward to pull together in one pot, with most reviewers noting it comes together in about 20–30 minutes.
  • Suggestions: Add the tortellini just before serving and avoid overcooking to prevent it from absorbing too much liquid and turning mushy. Some reviewers added chilli flakes for extra heat, or a splash of red wine to deglaze the pan for deeper flavour.
  • Leftovers: Generous portions mean leftovers are common; note that the tortellini absorbs most of the broth overnight, turning the soup into more of a pasta dish, though reviewers still found it enjoyable. The dish also freezes well.
  • Portions: This recipe yields well beyond its stated serving size, with several reviewers getting 6–8 servings from a 4-serving package.
  • Heat level: The Italian sausage carries a noticeable kick that some found surprising; consider this when cooking for young children or those sensitive to spice.
