Cooking Steps

Toast sesame seeds

  • Before starting, wash and dry all produce.
  • Heat a large non-stick pan over medium-high.
  • When hot, add sesame seeds to the dry pan. Toast for 3-4 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!)
  • Transfer to a plate.

  • Quarter, core, then cut apple into 1/8-inch match sticks.
  • Thinly slice green onion.
Make slaw

  • To a large bowl, add cabbage, vinegar, tahini sauce, half the toasted sesame seeds and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Toss to combine.
Cook beef

  • Reheat the same pan (from step 1) over medium-high.
  • When hot, add beef to the dry pan. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** 
  • Stir in gochujang and honey-garlic sauce. Cook for 1-2 min, stirring often, until slightly sticky. 
Warm tortillas

  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Assemble and serve

  • To the slaw, add apples. Toss to combine.
  • Arrange tortillas on a clean surface.
  • Top with spring mix, slaw, beef, green onions and remaining sesame seeds.
  • Divide wraps between plates.
