These seemingly simple noodles pack a full flavour punch with a homemade sesame sauce that has a little a kick to it. Finish your bowl off with edamame and sliced scallions!

Instructions

Boil eggs and make sauce

  • Prepare a medium bowl filled with cold water. Set aside.
  • When water is boiling, carefully add eggs. Cook for 6-8 min, then carefully transfer eggs to the bowl of cold water without draining boiling water. (NOTE: You will use the boiling water again in step 2.)
  • Meanwhile, thinly slice green onions.
  • Whisk together soy sauce mirin blend, tahini, sesame oil and half the chili-garlic sauce in a large bowl. Stir in half the green onions. Set aside.
Cook and assemble noodles

  • Add edamame to the boiling water. Cook, stirring occasionally, 3-4 min.
  • Add ramen noodles to the pot. Cook uncovered until tender, 1-2 min.
  • Drain noodles and edamame, then rinse under warm water.
  • Add noodles and edamame to the bowl with sauce. Season with salt and pepper, to taste, then toss to coat.
Finish and serve

  • Peel, then halve eggs. Season with salt and pepper.
  • Divide noodles, edamame and any remaining sauce between bowls.
  • Top with eggs, then sprinkle with remaining green onions.
  • Drizzle remaining chili-garlic sauce over top, if desired.
