Cooking Steps

Prep and make slaw

  • Before starting, preheat the broiler to high.
    Wash and dry all produce.
  • Roughly chop cilantro.
  • In a large bowl, drain pickle juice, set pickles aside. Add coleslaw cabbage mix, vinegar, mayo, sour cream, cilantro and 1/4 tsp (1/2 tsp) sugar. Season with salt and pepper. Toss to coat.
Broil fish

  • Brush a foil-lined baking sheet with 1/2 tbsp (1 tbsp) oil. 
  • Pat tilapia dry with paper towels, pressing well to absorb as much moisture as possible.
  • Arrange tilapia on prepared baking sheet. Season with salt, pepper and Carribean Spice Blend. Drizzle 1/2 tbsp (1 tbsp) oil over top. 
  • Broil in the middle of the oven for 7-9 min, until cooked through.**
Toast buns

  • Meanwhile, heat a large non-stick pan over medium-high.
  • While pan heats, halve buns. 
  • When the pan is hot, add 1 tbsp butter. Swirl the pan for 30 sec until butter melts. Add buns cut-sides down. Reduce heat to medium. (NOTE: For 4 servings, toast buns in batches, using 1 tbsp butter per batch.) 
  • Using another pan or a spatula, gently press down on buns and toast for 2-3 min per side, until crisp and golden.
Finish and serve

  • Stack bottom buns with spring mix, tilapia, some of the slaw and some of the pickles. Close with top buns.
  • Serve any remaining slaw and any remaining pickles on the side.
