Cooking Steps

Prep

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • Cut sweet potatoes into 1/2-inch wedges. 
  • To a small bowl, add maple syrup and miso broth concentrate. Stir to combine. Reserve half in a small bowl. Set aside. (NOTE: This is your maple-miso sauce.)
  • Pat chicken dry with paper towels. Sprinkle with half the Asian Sesame Blend. Season with salt and pepper, then toss to coat. 
Arrange sheet pan

  • To one side of a parchment-lined baking sheet, add sweet potatoes, remaining Asian Sesame Blend and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then toss to coat.
  • To the other side of the baking sheet, add chicken. (NOTE: For 4 servings, arrange chicken on a second parchment-lined baking sheet.) 
  • Spoon remaining maple-miso sauce over chicken. (NOTE: You'll use the reserved maple-miso sauce in step 6.)
Start roasting

  • Roast in the middle of the oven for 10-14 min, until chicken is opaque. (NOTE: For 4 servings, cook veggies in the middle and chicken in the bottom of the oven.) Chicken will finish cooking in step 5.
Prep broccoli

  • Meanwhile, cut broccoli into bite-sized pieces.
  • To a medium bowl, add broccoli and sesame oil. Season with salt and pepper, then toss to combine. 
Finish roasting

  • Once sweet potatoes have roasted for 10-14 min, remove from the oven. Flip sweet potatoes and scatter broccoli over top. 
  • Roast for 10-14 min, until veggies are tender and chicken is cooked through.**
Finish and serve

  • Divide chicken and veggies between plates. 
  • Spoon reserved miso-maple sauce over chicken.
