Cooking Steps

Prep

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • To a medium pot, add Golden Turmeric Spice Blend, 2/3 cup (1 1/3 cups) water and 1 tbsp (2 tbsp) butter. Cover and bring to a boil over high.
  • Once boiling, stir in couscous. Remove the pot from heat, then cover and set aside for 5 min to rehydrate.
  • Core, then cut peppers into 1/2-inch pieces.
  • Peel, then mince or grate garlic.
  • Zest, then juice half the lemon. Cut remaining lemon into wedges.
  • Pat chicken dry with paper towels, then cut into 1-inch pieces.
  •  In a medium bowl, add chicken, half the Spanish Spice Blend, chicken broth concentrate and garlic. Toss to combine.
Cook chicken and veggies

  • To one side of unlined baking sheet, add peppers, onions, corn, and 1/2 tbsp (1 tbsp) oil. Season with remaining Spanish Spice Blend, salt and pepper, then toss to combine.
  • To the other side of the baking sheet, add chicken.
  • Broil in the middle of the oven for 10-12 min, stirring halfway through, until tender and chicken is cooked through.**
Make piri piri mayo

  • Meanwhile, to a small bowl, add piri piri sauce, mayo, lemon juice, half the lemon zest and 1 tsp (2 tsp) water. Stir to combine. Season with salt and pepper.
Finish and serve

  • Add remaining lemon zest to couscous and fluff with a fork. Season with salt and pepper.
  • Divide couscous between bowls.
  • Top with veggies and chicken.
  • Drizzle piri piri mayo over top.
  • Squeeze lemon wedge over top.
