Cooking Steps

  • Before starting, preheat the ovent to 350F.
  • Grease an 8x8-inch metal baking tin with 2 tsp softened butter.
  • Line the base and sides of the tin with parchment paper, pressing down to adhere. (NOTE: Leave a 2-inch overhang on the sides of the tin. This helps to easily remove brownie blondies once cooled.)

  • Melt 5 tbsp butter in the microwave or in a small pot over medium heat.
  • Remove from heat and transfer butter to a large bowl. Add 1/4 cup brown sugar and 1/4 cup white sugar, then whisk to combine. Add 1 egg, 1/4 tsp salt, 1/4 tsp baking powder and whisk again to combine.
  • Add 2/3 cup flour and stir with a spatula until combined. Fold in 1/2 cup chocolate chips.
  • Set blondie batter aside.

  • Melt remaining chocolate and 3 tbsp butter in the same pot or microwave safe bowl until glossy and smooth.
  • Whisk in remaining egg, remaining white sugar, 2 tbsp packed brown sugar and 1/4 tsp salt until smooth.
  • Stir in 1/4 cup flour until smooth.
  • Add brownie batter to the base of the pan and spread evenly using the back of a spoon or spatula. Dollop large spoonfuls of blondie batter over top.
  • Bake in the middle of the oven until golden-brown and puffed in the center, 18-25 min.

  • Transfer pan to a wire rack to cool completely.
  • Slice brownie blondies into squares.
