Cooking Steps

Roast potato wedges

  • Before starting, preheat the oven to 450°F.
  • Wash and dry all produce.
  • Remove any brown spots from potatoes, then cut into 1/2-inch wedges.
  • To a parchment-lined baking sheet, add potatoes, half the Smoked Paprika-Garlic Blend and 1 tbsp oil. (NOTE: For 4 servings, use 2 baking sheets, with 1 tbsp oil per sheet.) Season with salt and pepper, then toss to coat.
  • Roast in the middle of the oven for 25-28 min, flipping halfway through, until tender and golden. (NOTE: For 4 servings, roast in the middle and bottom of the oven, rotating sheets halfway through.)
Caramelize onions

  • Meanwhile, peel, then cut onion into 1/4-inch slices.
  • Heat a large non-stick pan over medium.
  • When hot, add 2 tsp (4 tsp) oil, then onions. Cook for 3-4 min, stirring occasionally, until softened.
  • Add 1 tsp (2 tsp) sugar and season with salt. Cook for 6-8 min, stirring occasionally, until onions are dark golden.
  • Add vinegar and 1 tbsp (2 tbsp) water. Stir for 1 min, until onions are coated.
  • Remove from heat, then transfer caramelized onions to a small bowl. Set aside.
Prep halloumi

  • Meanwhile, carefully slice halloumi in half, parallel to the cutting board.
  • Rinse halloumi in cold water, then pat very dry with paper towels.
  • In another small bowl, stir together half the panko (use all for 4 servings) and 1 tsp (2 tsp) oil. Season with salt and pepper.
  • Arrange halloumi on another parchment-lined baking sheet.
  • Spread 1 tsp mayo over the top of each slice of halloumi. Top with panko, pressing down gently to adhere. 
Roast halloumi

  • Roast halloumi in the top of the oven for 8-10 min, until breadcrumbs are golden. 
Toast buns and make mayo

  • Halve buns.
  • Arrange buns directly on the top rack of the oven, cut-side up. Toast for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!) 
  • Meanwhile, to another small bowl, add remaining mayo, remaining Smoked Paprika-Garlic Blend and 1 tsp (2 tsp) water. Season with pepper, then stir to combine. 
Finish and serve

  • Carefully wipe out pan, then heat 1 tbsp (2 tbsp) butter over medium.
  • Crack in 2 (4) eggs. Season with salt and pepper. Pan-fry 2-3 min, covered, until egg whites are set.** (NOTE: Yolks will still be runny. Pan-fry eggs using oil instead of butter, if you like.)
  • Spread some smoky mayo onto top buns. 
  • Stack caramelized onions, spring mix, halloumi and eggs on bottom buns. Close with top buns. 
  • Divide sandwiches and potato wedges between plates.
  • Serve remaining smoky mayo alongside for dipping.

If you've opted to add eggs, carefully wipe out pan, then heat 1 tbsp (2 tbsp) butter over medium. Crack in 2 (4) eggs. Season with salt and pepper. Pan-fry 2-3 min, covered, until egg whites are set.** (NOTE: Yolks will still be runny. Pan-fry eggs using oil instead of butter, if you like.) Stack buns with eggs.
