Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Peel, then cut onion into 1/2-inch pieces.
  • Thinly slice green onions.
  • Roughly chop spinach.
  • Peel, then finely mince or grate garlic.
  • Place potatoes still in the package, front-side down in the microwave.
  • Microwave for 5-7 min, until fork tender. Let potatoes rest in the microwave for 2 min. Carefully transfer to a plate.
  • Once cool enough to handle, cut half the potatoes into 1/2-inch pieces (use all for 4 servings). (NOTE: Be careful, potatoes will be hot!)
Start stew

  • Heat a large pot over medium-high.
  • Pat chicken dry with paper towels.
  • When the pot is hot, add 1 1/2 tbsp (3 tbsp) oil, onions and chicken. Season with salt and pepper.
  • Cook for 3-5 min, stirring often, until chicken is golden. (NOTE: Chicken will finish cooking in step 3.)
Finish stew

  • To the pot, add garlic, Cream Sauce Spice Blend and Dill-Garlic Spice Blend. Cook for 1 min, until fragrant.
  • Add chicken stock powder, cream and 1 1/2 cups (3 cups) water. Stir to combine.
  • Reduce to medium-low.
  • Simmer for 3-5 min until stew has slightly thickened.** Season with salt and pepper.
  • Add chopped potatoes, half the mustard (use all for 4 servings), half the green onions and spinach.
  • Simmer for 1-2 min. Season with salt and pepper.
Finish and serve
4
  • Divide stew between bowls.
  • Sprinkle feta and remaining green onions over top.
  • Season with pepper.
