Cooking Steps

  • Before starting, wash and dry all produce.
  • Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
  • Thinly slice green onions.

  • Heat a large pot over medium-high heat. When hot, add sesame oil, then beef. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Add Asian Spice Blend, half the soy, 1/4 tsp (1/2 tsp) sugar and half the green onions. Cook for 1-2 min, stirring often, until fragrant and soy has evaporated. Season with salt and pepper.
  • Transfer to a plate.

  • Add 4 cups (7 1/2 cups) water, stock powder, miso and remaining soy to the same pot. Increase heat to high. Once boiling, add udon noodles, carrots and bok choy.
  • Using tongs, gently stir noodles to break up. Cook for 1 min, until veggies are tender and noodles are cooked.

  • Divide noodles and veggies between bowls. 
  • Top with beef, then broth. 
  • Sprinkle over remaining green onions.
