Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Thinly slice mushrooms.
  • Peel, then cut onions into 1/4-inch slices.
  • Peel, then mince or grate garlic.
  • Roughly chop cilantro.
  • Massage the pouch of rice to separate grains.
Start beef

  • Heat a large non-stick over medium-high. When hot, add 1 tbsp (2 tbsp) oil, beef, Indian Spice Mix, onions and garlic. Season with salt and pepper. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat. 
Cook mushrooms

  • To the pan, add mushrooms, beef broth concentrate, curry paste, 1/2 tbsp (1 tbsp) sugar and 1 tbsp (2 tbsp) butter. Cook for 4-5 min, until softened.
  • Add 1/2 cup (1 cup) water. Cook for 1-2 min, stirring occasionally, until slightly reduced. Season with salt and pepper.
Toast almonds and warm rice

  • Meanwhile, heat a medium non-stick pan over medium. When hot, add almonds to the dry pan. Toast for 3-4 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!) 
    Transfer to a plate.
  • Meanwhile, heat rice in the microwave for 2 min, as indicated on the package. (NOTE: If you don’t have a microwave, stir-fry rice in a hot non-stick pan with a splash of water for 3 min, until heated through.)
Finish beef

  • To the pan with beef-mushroom mixture, add rice. Stir to combine. Cook for 1-2 min, until rice is coated.
Finish and serve

  • Divide beef and mushroom fried rice between bowls.
  • Sprinkle almonds and cilantro over top.
