Prep

  • Before starting, wash and dry all produce.
  • Thinly slice chives. 
Wrap scallops

  • Separate, then halve each piece of prosciutto lengthwise. (TIP: Use kitchen shears to cut directly through prosciutto.)
  • Using a strainer, drain and rinse scallops, then pat dry with paper towels.
  • Season scallops with 1/2 tbsp Lemon-Pepper Seasoning. 
  • Wrap proscuitto around each scallop to cover completely. (NOTE: If there is some proscuitto leftover, save it for a snack or another creation!)
  • Gently press prosciutto to stick.

  • Heat a large non-stick pan over medium.
  • When hot, add 1/2 tbsp oil and 1/2 tbsp butter. Swirl the pan to melt, then add scallops. Sear for 1-2 min per side, flipping halfway through, until scallops are cooked through and prosciutto is golden.**
  • Add honey to the pan. Cook for 1 min, spooning sauce over scallops, until coated with butter-honey mixture. 
Finish and serve

  • Transfer scallops to a serving dish. 
  • Sprinkle with chives.
