Cooking Steps

Prep

  • Before starting, lightly oil the grill. While you prep, preheat the grill to medium (approx. 450°F).
  • Wash and dry all produce.
  • Core, then cut apple into 1/4-inch slices.
  • Cut cucumber into 1/2-inch rounds.
  • Peel, then cut shallots into 1/4-inch slices.
Make dressing

  • To a large bowl, add Dijon, honey, half the vinegar (use all for 4 servings) and 1 tbsp (2 tbsp) oil. Season with salt and pepper, then stir to combine.
  • Add shallots. Stir to combine.
Grill chicken

  • Pat chicken dry with paper towels. Season with salt, pepper and Zesty Garlic Blend. Drizzle 1 tsp (2 tsp) oil over top. Flip to coat.
  • Add chicken to the grill. Grill for 4-6 min per side, until chicken is cooked through.**
  • Transfer to a plate.
Mix salad

  • To the large bowl with dressing, add arugula and spinach mix, apples and cucumbers. Season with salt and pepper, then toss to combine.
Finish and serve

  • Divide salad between bowls.
  • Top with grilled chicken.
  • Sprinkle feta and salad topping mix over top.
