Shape dough

Before starting, preheat the oven to 475°F. Take pizza dough out of fridge to come to room temperature in a warm spot, about 30 mins before starting.

Heat guide for step 3: 1/2 tsp mild, 1 tsp medium and 1 1/2 tsp spicy!

Add 6 cups water and baking soda to a medium pot. Bring to a boil over high heat. While water comes to a boil, lightly oil a clean work surface. Divide dough in half. Use both hands to roll each piece of dough into a 24-inch long rope. Cut ropes into 1 1/2-inch long pieces. (NOTE: Don’t worry if dough pieces shrink when cut into pieces.)

Line a baking sheet with parchment. Add half the dough pieces to the boiling water and cook for 30 sec. Using a slotted spoon, gently remove dough pieces letting any excess water drip off, then place on the prepared baking sheet. Repeat with remaining dough pieces. Sprinkle tops with flaky salt. Bake in the top of the oven, until golden-brown, 10-12 min.

While pretzel bites bake, add cream cheese, half the Dijon, 1/3 cup warm water and 1/2 tsp hot sauce to a small pot. (NOTE: Reference heat guide.) Cook over low heat, whisking often, until warmed through and smooth, 3-4 min. Remove from heat, then whisk in cheddar until melted. Season with salt and pepper, then cover to keep warm. Stir together honey, whole grain mustard and remaining Dijon in a small bowl.

Finish and serve

When pretzel bites are done, melt 1 tbsp butter in a microwavable bowl. Drizzle butter over pretzel bites, directly on the baking sheet, then toss to coat. Set aside to cool, 5 min. Arrange pretzel bites on a serving plate. Serve with honey-mustard and hot cheese dip alongside.
