
Loaded Baked Potato Bites
Serves 4 | with Sour Cream and Bacon
We're serving up roasted yellow potatoes with the works! These loaded, handheld potato bites topped with cheddar cheese, sour cream and crispy bacon are going to be a crowd favourite!

Before starting, preheat the oven to 450°F. Wash and dry all produce. Cut potatoes into 1/4-inch rounds. Add potatoes and 2 1/2 tbsp oil to a parchment-lined baking sheet. Season with garlic salt and pepper, then toss to coat. Roast in the bottom of the oven, flipping halfway through, until tender and golden-brown, 28-30 min.

Meanwhile, thinly slice green onions. Cut bacon into 1/4-inch pieces. (TIP: Use kitchen shears to cut bacon with ease!) Heat a medium non-stick pan over medium heat. When hot, add bacon. Cook, flipping occasionally, until crispy, 7-8 min.** Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Set aside.

When potatoes are done, remove from the oven, then sprinkle cheese over top. Return to the middle of the oven and roast until cheese melts, 1-2 min.

Combine sour cream and 2 tsp water in a small bowl. Drizzle sour cream over potatoes, then sprinkle bacon and green onions over top. Serve loaded baked potato bites directly on the baking sheet.
