Cooking Steps

  • Add turkey,  and 1/4 tsp salt to a medium bowl. Season with pepper, then combine.
    Form mixture into 4 2-inch-wide patties. (NOTE: Your mixture may look wet; this is normal!)
  • Heat a large non-stick pan over medium-high heat. 
    When hot, add 1/2 tbsp oil, then turkey patties. Pan-fry until patties are cooked through, 5-6 min per side.**
  • Remove pan from the heat, then sprinkle cheese over top. Cover, then set aside to let the cheese melt.

  • Thinly slice tomato, then season with salt and pepper. 
  • Halve sandwich buns, then spread pesto over cut sides of the bun. 
  • Divide tomatoes between bottom buns, then layer turkey patties over top. 
  • Close with top bun.

  • Transfer paninis to a parchment-lined baking sheet. Place another large baking sheet over top of paninis and press down firmly to secure (NOTE: You can place a heavy pot or saucepan on the top baking sheet to help weigh it down.)
  • Bake in the middle of the oven until golden-brown, 4-5 min.
  • Alternatively, place paninis into a sandwich press and close. Grill until golden-brown, 3-5 min.

  • Remove paninis from the oven and halve.
  • Divide panini halves between plates.
