Cooking Steps

Cook rice

  • Before starting, to a medium pot, add 1 1/4 cups (2 1/2 cups) water, 1 tbsp (2 tbsp) butter and 1/8 tsp (1/4 tsp) salt. Cover and bring to a boil over high.
  • Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice, peas and half the Cumin-Turmeric Spice Blend and reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.

  • Thinly slice cucumber.
  • Thinly slice green onions, keeping white and green parts separate.
Make slaw

  • To a large bowl, add coleslaw cabbage mix, cucumber, mayo, vinegar and 1/2 tsp (1 tsp) sugar. Season with salt and pepper. Toss to coat.

  • When rice has 5 min remaining, heat a large non-stick pan over medium-high. 
  • When hot, add 1 tbsp (2 tbsp) oil to the pan, then turkey, brown sugar, green onion whites, half the Warming Spice Blend (use all for 4 servings) and remaining Cumin-Turmeric Spice Blend. Cook for 3-5 min, breaking up turkey into smaller pieces, until no pink remains.** Season with salt and pepper.
  • Stir in broth concentrate, soy sauce and 2 tbsp (1/4 cup) water. (TIP: If you like things spicy, drizzle some of your favourite hot sauce here!)
Finish and serve

  • Fluff rice with a fork.
  • Divide rice and slaw between bowls. Top with turkey mixture.
  • Sprinkle remaining green onions over top.

If you've opted to get turkey, add 1 tbsp (2 tbsp) oil to the pan, then add turkey. Cook turkey in the same way the recipe instructs you to cook the beef.**
