Cooking Steps

Cook beef and onions

  • Before starting, preheat the oven to 450°F. Wash and dry all produce.
  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pan is hot, add beef and onions. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Carefully drain and discard excess fat.
  • Add Mexican Seasoning and 2 tbsp (4 tbsp) water and cook for 1-2 min, stirring often, until fragrant. Season with salt and pepper.
Prep and marinated tomatoes

  • Meanwhile, cut tomatoes into 1/4-inch pieces. Season with salt.
  • Zest, then juice lime.  
  • In a large bowl, whisk together 1/2 tbsp (1 tbsp) lime juice, 1 tsp (2 tsp) lime zest, 1/4 tsp (1/2 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper.
  • Add tomatoes, then toss to coat.

  • On a parchment-lined baking sheet, arrange flatbreads. Brush with 1/2 tbsp (1 tbsp) oil. (NOTE: For 4 servings, use 2 parchment-lined baking sheets, with 1/2 tbsp oil for each baking sheet.)
  • Toast flatbreads in the middle of the oven for 2-3 min, until softened. (NOTE: For 4 servings, toast flatbreads in the middle and bottom of the oven.)

  • Remove flatbreads from the oven.
  • Spread flatbreads with Tomato Sauce Base, sprinkle with cheese, then top with beef-onion mixture.
  • Bake flatbreads in the middle of the oven for 5-7 min, until cheese melts. (NOTE: For 4 servings, bake flatbreads in the middle and bottom of the oven.)
Make dressing

  • Meanwhile, in a large bowl, whisk together remaining lime juice, 1/4 tsp (1/2 tsp) sugar, 1 tbsp (2 tbsp) guacamole and 1 tbsp (2 tbsp) oil. Season with salt and pepper.
  • To the bowl with dressing, add spring mix, then toss to coat.
Finish and serve

  • Cut flatbreads into quarters.
  • Divide flatbread and salad between plates.
  • Dollop guacamole, then sprinkle marinated tomatoes on flatbread.
