Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Remove any brown spots from potatoes. Cut into 1/4-inch rounds. 
  • To a parchment-lined baking sheet, add potatoes and 1 tbsp oil. (NOTE: For 4 servings, use 2 sheets, with 1 tbsp oil per sheet.) Season with half the Zesty Garlic Blend, salt and pepper. Toss to coat. Arrange in a single layer
  • Roast in the middle of the oven for 25-28 min until tender and golden. (NOTE: For 4 servings, roast in the middle and bottom of the oven, rotating sheets halfway through.)

  • Meanwhile, heat a large non-stick pan over medium. Cut bacon strips in half, crosswise.
  • When hot, add bacon. (NOTE: For 4 servings, don't crowd pan; cook bacon in batches, if needed.) Cook for 5-8 min, flipping occasionally, until crispy.** 
  • Remove from heat. Using tongs, transfer bacon to a paper towel-lined plate. Set aside.
  • Remove and discard all but 1/2 tbsp (1 tbsp) bacon fat.

  • Meanwhile, thinly slice mushrooms. 
  • In a small bowl, combine mayo and mustard.
  • Remove any damaged outer leaves of lettuce. Separate leaves. Tear into burger-sized pieces.
  • Drain pickles.
  • When bacon is done, reheat the same pan with reserved bacon fat over medium-high. 
  • When hot, add mushrooms. Cook for 5-6 min, stirring often and scraping up any browned bits until mushrooms are tender.
  • Remove from heat, then season with salt and pepper. Transfer mushrooms to a bowl.

  • To a medium bowl, add beef, breadcrumbs, remaining Zesty Garlic Blend and 1/8 tsp (1/4 tsp) salt. Season with pepper, then combine. 
  • Form mixture into 2 (4) 5-inch-wide patties.
  • Reheat the same pan (from step 3) over medium. When hot, add patties to the dry pan. Pan-fry for 4-5 min per side until cooked through.**
  • Remove from heat. Sprinkle goat cheese or cheddar over patties. Cover and set aside for 2 min until cheese melts.

  • Meanwhile, halve buns.
  • Arrange buns directly on the top rack of the oven, cut-sides up. Toast for 3-4 min, until browned. (TIP: Keep an eye on them so they don't burn!)
  • If you like, when potatoes are done, carefully remove baking sheet from the oven. Sprinkle any remaining cheddar over potatoes. 
  • Return to oven and roast for 1-2 min until cheese melts.

  • To servings bowls, add ketchup, bacon, crispy shallots, pickles, lettuce. Serve alongside zesty mayo and mushrooms. 
  • Stack patties onto bottom buns, then divide between plates with top buns alongside. 
  • Serve with potato coins and garnishes for everyone to build their own plate. 
  • (TIP: Extra lettuce, zesty mayo, crumbled bacon and crispy shallots make an yummy side salad, if you like!)
