Cooking Steps

Start mash and bacon

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Remove any brown spots from potatoes, then peel and cut into 1-inch pieces.
  • To a large pot, add potatoes, 2 tsp salt and enough water to cover by approx. 1 inch. Cover and bring to a boil over high.
  • Once boiling, reduce heat to medium-high. Simmer uncovered, 10-12 min, until potatoes are fork-tender.
  • Meanwhile, heat a large non-stick pan over medium. 
  • When hot, add bacon. Cook 6-9 min, flipping occasionally, until crispy.**
  • Using tongs, transfer bacon to a paper towel-lined plate, reserving all of the fat in the pan.
Cook carrots

  • While bacon cooks, peel, then cut carrot into 1/4-inch rounds. 
  • To an 8x8-inch baking dish, add carrots, 1/4 tsp garlic salt, 1/2 tsp (1 tsp) sugar, 1 tbsp (2 tbsp) butter and 2 tbsp (4 tbsp) water. Season with pepper. Toss to coat.
  • Wrap tightly with foil. Roast in the bottom of the oven, 16-20 min, stirring halfway, until carrots are tender and lightly glazed.
Finish prep and cook steaks

  • Thinly slice mushrooms.
  • Peel, then cut shallot into 1/4-inch peices. 
  • Roughly chop parsley.
  • Pat steaks dry with paper towels. Season with remaining garlic salt and pepper.
  • Reheat the same pan over medium-high.
  • When hot, add steaks. Sear 2-3 min per side, until golden.
  • Remove the pan from heat and transfer steaks to an unlined baking sheet. Reserve all the fat in the pan.
  • Roast in the top of the oven 4-8 min, until cooked to desired doneness.**
Roast steaks and finish mash

  • Drain and return potatoes to the same pot, off heat. Mash cream and 2 tbsp (4 tbsp) butter into potatoes until creamy. Add half the parsley. Season with salt and pepper. Stir to mix. Cover to keep warm.
  • When steaks are done, transfer to a plate, then loosely cover with foil and set aside to rest for 5 min. 
Make mushroom sauce

  • While steaks rest, reheat the same pan over medium-high.
  • When hot, add mushrooms and shallots. Cook 4-6 min, stirring occasionally, until softened.
  • Sprinkle half the Gravy Spice Blend (use all for 4 servings) over top. Stir to coat.
  • Add wine, then slowly stir in 2/3 cup (1 1/3 cups) water, broth concentrate and any steak resting juices.
  • Bring to a simmer. Cook 2-3 min, stirring often, until sauce thickens slightly. 
Finish and serve

  • Roughly chop or tear bacon into bite-sized pieces.
  • Thinly slice steak. 
  • Divide steak, mash and carrots between plates. 
  • Spoon mushroom sauce over steak and mash.
  • Sprinkle bacon and remaining parsley over steak and carrots.
