- Before starting, preheat the oven to 450°F. Wash and dry all produce.
- Cut bok choy into 1/2-inch pieces. Rinse bok choy leaves to wash away any dirt.
- Cut mushrooms into 1/2-inch pieces.
- Thinly slice chives.
- Pat salmon dry with paper towels. Season with half the garlic salt and pepper.
- To a parchment-lined baking sheet, add salmon. Roast in the middle of the oven for 10-12 min, until cooked through.**
- Heat 1 tbsp (2 tbsp) oil in a large non-stick pan over medium-high.
- When hot, add mushrooms. Cook for 2-3 min, stirring occasionally.
- Add bokchoy, cook for 2-3 min, stirring occasionally, until tender-crisp.
- Add 1 tbsp (2 tbsp) butter, cream, miso concentrate, remaining garlic salt, soy sauce, cream cheese and 1/3 cup (2/3 cup) water.
- Bring to a boil, stirring frequently, until cream cheese is melted.
- Add penne and parmesan. Reduce heat to medium. Cook for 3-5 min, stirring occasionally, until penne is tender and coated. Season with salt and pepper, then stir to combine.
- Add half the chives and remove from heat.
- Divide pasta between bowls.
- Divide salmon between bowls.
- Sprinkle crispy shallots and remaining chives over top.
