Cooking Steps

Prep tofu

  • Before starting, wash and dry all produce.
  • Pat tofu dry with paper towels.
  • Cut tofu into 1/2-inch cubes.
  • To a medium bowl, add tofu and 1 tbsp (2 tbsp) oil. Season with Enchilada Spice Blend, salt and pepper, then toss to coat. Set aside.
Prep and make crema

  • Zest, then juice lime.
  • Cut tomato into 1/4-inch pieces.
  • In a small bowl, combine guacamole, sour cream, 1/2 tbsp (1 tbsp) lime juice and lime zest. Set aside.
Make salad

  • To a large bowl, add 1/2 tbsp (1 tbsp) lime juice, 1/4 tsp (1/2 tsp) sugar and 1/2 tbsp (1 tbsp) oil. 
  • Season with salt and pepper, then whisk to combine.
  • Add spring mix and tomatoes, then toss to combine. Set aside.
Pan-fry tofu

  • Heat a large non-stick pan over medium-high. 
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then tofu. 
  • Cook for 5-6 min, stirring often, until browned all over.
  • Remove the pan from heat. Add 1 tbsp (2 tbsp) water and Tex-Mex paste. Toss to coat.
Warm tortillas

  • Wrap tortillas in paper towels.
  • Microwave for 1 min, until warm and flexible. (TIP: You can skip this step if you don't want to warm tortillas!)
Finish and serve

  • Divide Tex-Mex tofu between tortillas.
  • Sprinkle with cheese.
  • Dollop avocado crema over top.
  • Top with some salad.
