Cooking Steps

Start rice pilaf

  • Before starting, heat a large pot over medium. Wash and dry all produce.
  • Meanwhile, massage the pouch of rice to separate grains, then open top of package.
  • To the pot add 1 tbsp (2 tbsp) butter, carrots, vegetable stock powder, half the Cumin-Turmeric Spice Blend, microwaveable rice and 1/4 cup (1/2 cup) water. 
  • Stir to combine, 1-2 min.
  • Cover and cook for 3-4 min. Remove from heat.

  • Slice cucumbers into 1/8-inch thick rounds.
  • To a small bowl, add cucumbers and half the yogurt sauce. Season with salt and pepper. Stir to coat.
Cook beef

  • Heat a large non-stick pan over high.
  • When hot, add 1 tsp (2 tsp) oil, then beef, onions and peas.
  • Season with salt and pepper. Cook for 4-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Reduce heat to medium. Add curry paste, broth concentrate, remaining Cumin-Turmeric Spice Blend, 1/4 tsp (1/2 tsp) sugar and 1/3 cup (2/3 cup) water.
  • Cook for 1 min, stirring often, until fragrant. Season with salt and pepper.
Finish and serve

  • Fluff rice with fork, then divide between bowls.
  • Top with beef mixture and creamy cucumbers.
  • Drizzle remaining yogurt sauce over top of beef mixture.
