  • Before starting, to a medium pot, add Cumin-Turmeric Spice Blend, half the stock powder and 1 1/4 cups (2 1/2 cups) water. Cover and bring to a boil over high. 
  • Wash and dry all produce.
  • Using a strainer, rinse rice until water runs clear.
  • To the boiling water, stir in rice and carrots, then reduce heat to low. Cover and cook for 13-15 min, until rice is tender and water is absorbed.
  • Remove from heat. Set aside, still covered.
Cook beef and onions

  • Meanwhile, in a large non-stick pan, heat 1/2 tsp (1 tsp) oil over medium-high. (NOTE: For 4 servings, use a large pot.)
  • When the pan is hot, add beef, raisins and onions. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.** Season with salt and pepper.
Flavour beef-onion mixture

  • To the same pan, add Smoked Paprika-Garlic Blend, remaining stock powder and 2 tbsp (1/4 cup) water. Cook for 1-2 min, stirring often, until fragrant. Season with salt and pepper.
Finish and serve

  • When rice is done, to the pan with beef-onion mixture, add rice, then stir to combine.
  • Divide pilaf between bowls. (TIP: Add a dash of your favourite hot sauce, if you like.)
  • Sprinkle almonds and tear cilantro over top.
