Prep

  • Before starting, wash and dry all produce.
  • Core, then cut apples into 1/4-inch slices.
  • Trim ends of celery, then cut into 1/4-inch slices. 
  • Remove and discard outer layer of lettuce. Remove stem. Cut lettuce into 1/2-inch pieces.
Toast pecans

  • Heat a large non-stick pan over medium. 
  • When hot, add pecans to the dry pan. Toast for 3-4 min, stirring often, until golden. (TIP: Keep your eye on them so they don't burn!) 
  • Transfer to a plate.
Make dressing

  • To a large bowl, add vinegar, fig spread, mustard and 3 tbsp oil. Whisk to combine. (TIP: If you don't have a bowl big enough, divide dressing into 2 large bowls, then mix equal amounts of salad in each!)
  • Add cranberries, then stir to combine. 
Finish and serve

  • Add celery, lettuce, spring mix and apples to the bowl with dressing. Season with salt and pepper, then toss to combine. 
  • Sprinkle with pecans.
