Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Half zucchini lengthwise, then cut zucchini into 1/4-inch half-moons.
Cook beef and veggies

  • Heat a large pot over medium-high heat. (Same for 4 servings)
  • When hot add 1 tbsp (2 tbsp) butter, beef, and zucchini. Season with salt and pepper. Cook for 4-6 min, stirring often and breaking up beef into smaller piece until cooked through.**
  • Carefully drain fat from the beef.
Cook orzo

  • Add orzo. Season with salt and pepper. Stir to mix.
  • Add stock powder, Italian seasoning and 2 1/2 cups (4 cups) water. Bring to a boil over high.
  • Reduce heat to medium. Cook uncovered, stirring occasionally until orzo is tender, 10-12 min.
Finish prep

  • Thinly slice basil. 
  • Halve tomatoes. 
Finish and serve

  • Once orzo is tender, add pesto, basil and tomatoes. Cook for 1 min, stirring often combined. Season to taste with salt and pepper.
  • Divide hearty beef and pesto orzo past between bowls. Sprinkle parmesan over top.
