Cooking Steps

Make sweet potato mash

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • Peel, then cut sweet potatoes into 1-inch pieces. To a large pot, add sweet potatoes, 2 tsp salt and enough water to cover (by approx. 1 inch) (use same for 4 servings).
  • Cover and bring to a boil over high. Once boiling, reduce heat to medium-high. Simmer uncovered for 10-12 min, until fork-tender. Drain and return sweet potatoes to the same pot, off heat. Mash 2 tbsp (4 tbsp) butter into sweet potatoes until creamy. Season with salt and pepper.

  • Meanwhile, peel, then mince or grate garlic.
  • Peel, then cut onion into 1/4-inch pieces.
  • Core, then cut pepper into 1/2-inch pieces.
  • Using a strainer, drain and rinse beans.
Cook beef

  • In a large non-stick pan, heat 1/2 tbsp (1 tbsp) oil over medium-high.
  • When the pan is hot, add beef, garlic and onion. Cook for 3-5 min, breaking up beef into smaller pieces, until no pink remains.**
  • Carefully drain and discard excess fat.
  • Add Southwest Spice Blend, Tex-Mex paste, tomato sauce base, peppers, black beans and 1/2 cup (3/4 cup) water. Cook for 2-3 min, stirring often, until peppers are tender crisp. Season with salt and pepper.
Broil shepherd's pie

  • Transfer filling to an 8x8-inch baking dish (9x13-inch for 4 servings). Top with sweet potato mash, spreading evenly to cover filling.
  • Broil in the middle of the oven for 5-6 min, until warmed through. (TIP: Keep an eye on it so it doesn't burn!)
Finish and serve

  • Let shepherd's pie cool slightly for 4-5 min.
  • Thinly slice green onions.
  • Divide shepherd's pie between plates.
  • Sprinkle green onions over top.
