Cooking Steps

Prep

  • Before starting, wash and dry all produce.
  • Peel, then cut kiwi into 1/2-inch pieces.
  • Peel, pit, then cut mango into 1/2-inch pieces. (TIP: If your mango is green or unripe, you can still use it! Cut mango into 1/4-inch pieces and add 1/4 tsp sugar to the dressing.)
  • Drain pineapple, reserving the juice.
  • Peel, segment, then halve orange slices.
Make lime dressing

  • Zest, then juice lime.
  • To a large bowl, combine lime juice, lime zest, honey and 1 tbsp (2 tbsp) pineapple juice, then whisk to combine.
Finish and serve

  • To the bowl with dressing, add pineapple, kiwi, mangoes and oranges, then toss to combine. 
  • Serve immediately or keep in the fridge for up to 8 hours before serving.
