Cooking Steps

Prep and make dressing

  • Before starting, wash and dry all produce.
  • Drain and rinse black beans, then pat dry with paper towels.
  • Thinly slice green onions.
  • Rough chop cilantro. 
  • Over a small bowl, drain pineapple, reserving juice.
  • Cut tomato into 1/4-inch pieces.
  • Zest, then juice lime.
  • In a large bowl, whisk together spicy mayo, 1/4 tsp (1/2 tsp) lime zest, 1/2 tbsp (1 tbsp) lime juice and 1 tsp (2 tsp) pineapple juice. Season with salt and pepper. (NOTE: This is your spicy tropical dressing.)
Form beef patties

  • In a medium bowl, combine beef, breadcrumbs, Caribbean Spice Blend, half the green onions, 1/8 tsp (1/4 tsp) salt and 1/8 tsp (1/4 tsp) pepper.
  • Divide mixture into 8 equal portions (16 portions for 4 servings).
  • Roll into balls, then flatten into 1/2-inch-thick patties. (NOTE: Your mixture may be sticky. Lightly wet your hands to make it easier to form patties.)
Cook beef patties

  • Heat a large non-stick pan over medium.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then patties. Cook for 3-4 min, until golden all over and cooked through.**
  • Remove from heat.
  • Transfer to a plate.
Make salsa

  • In another medium bowl, whisk together 1/2 tsp (1 tsp) sugar, 1/2 tbsp (1 tbsp) lime juice and 1 tbsp (2 tbsp) oil.
  • Add tomatoes, pineapple, cilantro, half the black beans (use all for 4 servings) and remaining green onions, then toss to coat. Season with salt and pepper. (NOTE: This is your salsa!)
Dress salad

  • To the bowl with dressing (from step 1), add spring mix and cabbage, then toss to combine.
Finish and serve

  • Divide salad between plates. Top with patties and salsa.
