Instructions

Prep and cook bacon

  • Heat a large non-stick pan over medium heat.
  • While the pan heats, cut bacon into 1/2-inch pieces.
  • When hot, add bacon. Cook, flipping occasionally, until crispy, 5-7 min.** Remove the pan from heat. Using a slotted spoon, transfer bacon to a paper towel-lined plate. Set aside.
Make spiced chips

  • Meanwhile, arrange tortilla chips on a parchment-lined baking sheet. Drizzle with 1 tbsp oil, then season with Southwest Spice Blend and 1/4 tsp garlic salt. Toss to coat.
  • Bake in the middle of the oven until warmed through, 2-3 min.
Finish prep and start dip

  • Thinly slice green onion, keeping the white and green parts separate.
  • Add cream cheese, sour cream, mayo, green onion whites and 1/4 tsp garlic salt to a large bowl. Season with pepper, then stir to combine. 
Finish and serve

  • Transfer dip to a serving bowl, then sprinkle cheddar cheese, bacon and remaining green onions over top. 
  • Serve tortilla chips on the side for dipping.
