Cooking Steps
- Add flour, 1/2 tsp baking soda and 1/2 tsp salt to a medium bowl, then whisk to combine.
- Add softened butter, brown sugar and 5 tbsp white sugar to a large bowl, then beat using a wooden spoon or electric hand mixer until combined and slightly fluffy, 1-2 min. Add egg and half the honey, then beat until combined.
- Add flour mixture to the large bowl with the butter and sugar mixture, then beat until just combined and no floury spots remain.
- Add sprinkles and white chocolate chips to the cookie dough, then mix to combine.
- Press cookie dough in an even layer into the base of an 8-inch round cake pan (NOTE: If you don't have a round pan, use a square 8x8-inch pan instead).
- Bake in the middle of the oven until cookie cake is golden-brown and a knife inserted into the centre comes out clean, 20-30 min. (NOTE: Baking time will vary depending on the type of pan used.)
- Transfer pan to a wire rack and let cookie cake cool slightly to firm up, 30 min.
- Cut funfetti cookie cake into desired number of slices.
