Cooking Steps

  • Before starting, preheat the oven to 450°F.
    Wash and dry all produce.
  • Strip sage leaves from stems, then finely chop 1/2 tbsp.
  • Remove any brown spots from potatoes, then cut into 1-inch pieces. To a parchment-lined baking sheet, add potatoes, half the chopped sage and 1 tbsp oil.  Season with 1/2 tsp garlic salt and pepper, then toss to coat.  
  • Roast in the middle of the oven for 24-28 min, flipping halfway through, until tender and golden.

  • To another parchment-lined baking sheet, add bacon. Brush with half the maple. Roast in the bottom of the oven for 10-14 min, until bacon is crisp and cooked through.**
  • Meanwhile, to a medium bowl, add sausage, breadcrumbs, remaining chopped sage and remaining maple. Season with 1/2 tsp garlic salt and pepper, then combine. Form mixture into 2 equal sized  patties.
  • Heat a large non-stick pan over medium. When hot, add 1/2 tbsp oil and patties. Pan-fry 5-6 min per side, until cooked through.**  Transfer to a plate, then cover to keep warm.

  • Meanwhile, halve buns. Arrange buns on another unlined baking sheet, cut-sides up. Toast for 3-4 min, until golden. (TIP: Keep an eye on them so they don't burn!)
  • Once patties are finished cooking, carefully rinse and wipe the pan clean. Reheat the same pan over medium-low and add 1 tbsp oil. 
  • Crack in two eggs. Season with salt and pepper. Pan-fry for 2-3 min, covered, until egg whites are set.**

  • Spread half the ketchup over top buns.
  • Stack greens, patties, bacon and eggs on bottom buns. Close with top buns.
  • Divide sandwich burgers and potatoes between plates.
  • Serve remaining ketchup on the side to dip!
