Cooking Steps

  • Core, then cut pepper into 1/2-inch pieces.
  • Cut tomatoes into 1/2-inch pieces.
  • Finely chop cilantro.

  • Heat a large non-stick pan over medium-high heat.
  • When hot, add 1/2 tbsp (1 tbsp) oil, then peppers, onions and tomatoes. Cook, stirring occasionally, until veggies begin to soften and tomatoes begin to break down, 1 min.
  • Add shrimp, Tex-Mex paste and 1 tbsp (2 tbsp) water. Cook, stirring occasionally, until shrimp just turn pink and tomatoes have broken down, 2-3 min.**
  • Remove from heat.
  • Transfer filling to a medium bowl and carefully wipe the pan clean.

  • Arrange tortillas on a clean surface.
  • Divide cheese between tortillas, then top with shrimp and veggie filling. Fold tortillas in half to enclose filling.

  • Heat the same pan (from step 2) over medium-high.
  • When hot, add 3 tacos to the dry pan. Cook until golden-brown, 1-2 min per side.
  • Reduce heat to medium and repeat with remaining tacos.

  • Divide tacos between plates, then drizzle with salsa.
  • Sprinkle cilantro over top.
