Cooking Steps

Cook pasta

  • Before starting, preheat the oven to 425°F.
  • Bring a large pot of salted water to a boil over high (use same for 4 servings). Wash and dry all produce. 
  • To the boiling water, add linguine. Cook for 10-13 min, until tender but still firm to the bite.
  • Reserve 1 cup (2 cups) pasta water.
  • Strain linguine, then return to the pot, off heat.
Cook chicken

  • Pat chicken dry with paper towels. Season with half the Italian Herb Spice Blend, salt and pepper.
  • In a large non-stick pan, heat 1 tbsp (2 tbsp) oil over medium. When hot, add chicken. (NOTE: Don't crowd the pan; cook chicken in 2 batches if needed.) Cook 1-2 min per side, until golden. Transfer chicken to an unlined baking sheet.
  • Roast in the middle of the oven for 10-12 min, until cooked through.**
  • Carefully wipe pan clean.
Start sauce

  • To the same pan over medium-low, add 1 tbsp (2 tbsp) butter. When melted, add Cream Sauce Spice Blend. Cook for 1 min, stirring frequently, until fragrant.
  • Add garlic puree, remaining Italian Herb Spice Blend, cream cheese, cream and 3/4 cup (1 1/2 cups) reserved pasta water. Cook for 3-4 min, stirring occasionally, until thickened. Season with pepper.
  • Remove from heat.

  • Meanwhile, cut tomato into 1/4-inch pieces.
  • Roughly chop spinach.
Finish pasta

  • To the pot with pasta over low, add sauce from the pan and spinach. Cook for 1-2 min, stirring occasionally, until pasta is coated.
  • Add tomatoes. Stir to combine. Season with salt and pepper.
Finish and serve

  • Thinly slice chicken.
  • Divide pasta between bowls.
  • Top with chicken and sprinkle Parmesan over top.
