PREP

Before starting, preheat your broiler to high. Wash and dry all produce. Quarter the tomatoes. Cut or tear lettuce into 1-inch pieces. Zest, then juice half the lime (whole lime for 4ppl). Cut remaining lime into wedges. Roughly chop cilantro.

MAKE MARINADE & DRESSING

Stir together half the lime zest, Mexican seasoning and 1 tbsp oil (dbl for 4ppl) in a medium bowl. Season with pepper. Whisk together lime juice, 1/2 tsp sugar and 1 tbsp oil (dbl both for 4ppl) in a large bowl.

BROIL ONIONS & STEAK

Pat steak dry with paper towels. Season steak with salt and pepper. Add steak and onions to the medium bowl with Mexican seasoning mixture and toss to coat. Transfer to a foil-lined baking sheet and arrange in a single layer. Broil steak and onions in the middle of the oven, flipping steak halfway through broiling, until onions are tender and steak is cooked to desired doneness, 6-8 min.**

WARM TORTILLAS

Wrap the tortillas in foil and place in the bottom of the oven to warm for 4-5 min. (You can skip this step if you don't want to warm the tortillas!)

MAKE SALAD & SALSA

While steak and onions broil, add lettuce and half the tomatoes to the large bowl with dressing and toss to combine. Season with salt and pepper. Stir together remaining tomatoes, broiled onions, half the cilantro, remaining lime zest and 1/2 tbsp oil (dbl for 4ppl) in a small bowl. Season with salt and pepper.

FINISH & SERVE

Thinly slice steaks. Divide tortillas between plates. Top each tortilla with salsa, steak and cheese. Top with sour cream and sprinkle with remaining cilantro. Serve salad on the side.
