Cook couscous

  • Before starting, to a medium pot, add half the stock powder and 2/3 cup (1 1/3 cups) water. Bring to a boil over high.
  • Wash and dry all produce.
  • Once water is boiling, stir in couscous. Remove the pot from heat, then cover and set couscous aside for 5 min to rehydrate.

  • Meanwhile, roughly chop cilantro.
  • Juice lemon.
Start stew

  • Heat a large pot over medium-high.
  • While the pot heats, snip a corner of chicken packaging and drain excess liquid.
  • When hot, add 1 tbsp (2 tbsp) oil, then chicken and mirepoix. Season with salt and pepper. Cook for 4-6 min, stirring often, until chicken is golden and cooked through.**
  • Add Moroccan Spice Blend. Cook for 30 sec, until fragrant. 
  • Add crushed tomatoes. Cook for 4-5 min, stirring often, until stew thickens slightly. Season with salt and pepper. 
Finish and serve

  • Add spinach and 1/2 tbsp (1 tbsp) lemon juice. Cook for 1-2 min, until spinach wilts.
  • Add 1/2 tbsp (1 tbsp) butter to couscous, then fluff with a fork. Stir in half the cilantro.
  • Divide couscous between plates. Top with chicken stew.
  • Sprinkle remaining cilantro over top.
