Cooking Steps

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Over a tall jar or container, drain chickpeas, reserving liquid.
  • To the same jar, add Dijon, half the vinegar, half the Cumin-Turmeric Spice Blend. Season with pepper and 1/8 tsp (1/4 tsp) salt.
  • Using a hand blender, pulse for a few seconds, until mixture is combine.
  • Slowly drizzle in 1/2 cup (1 cup) oil while blending continously for 1-2 min, until mixture thickens.
  • Taste and adjust seasoning, if needed.

  • Thinly slice celery.
  • Peel, core, then cut half the apple into 1/4-inch pieces. Cut remaining apple into 1/4-inch slices.
  • Cut cucumber into 1/2-inch rounds.

  • In a large bowl, add chickpeas, the gently smash them using a potato masher.
  • Add mayo, remaining Cumin-Turmeric Spice Blend, Dill-Garlic Spice Blend, celery and diced apple, then stir to combine. Season with salt and pepper.
  • Halve buns.
  • Arrange buns directly on the top rack of the oven, cut-sides up. Broil for 1-2 min, until golden. (TIP: Keep an eye on them so they don't burn!)

  • In another large bowl, whisk together remaining vinegar, 1/2 tsp (1 tsp) sugar and 1 tbsp (2 tbsp) oil. Season with salt and pepper.
  • Add spring mix, cucumbers and sliced apples, then toss to coat.
  • Divide chickpea smash between buns.
  • Serve salad alongside.
  • Sprinkle feta over salad.
