Cooking Steps

Prep

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Halve buns.
  • On an unlined baking sheet, arrange buns, cut-sides up. Set aside.  
Cook chicken

  • Heat a large non-stick pan over medium-high. 
  • Drain chicken. Spread chicken out on a plate or a clean, flat surface, then season with Applewood Smoke Spice, salt and pepper.
  • When the pan is hot, add 1 tbsp (2 tbsp) oil, then chicken. Cook for 1-2 min, turning occasionally, until chicken is golden.
  • Reduce heat to medium. Cook for 3-5 min, stirring often, until chicken is cooked through.**
  • Remove the pan from heat. Add BBQ sauce, then stir to combine. (TIP: Use two forks to break up any larger pieces of chicken.)
Toast buns and make slaw

  • Meanwhile, to a medium bowl, add mayo and vinegar, then season with salt and pepper. Whisk to combine. 
  • To the bowl, add coleslaw cabbage mix and cranberries, then toss to coat. 
  • Broil buns for 1-2 min in the middle of the oven, until golden. (TIP: Keep an eye on them so they don't burn!)
Finish and serve

  • Divide saucy chicken between bottom buns, then top with some coleslaw. Close sandwiches with bottom buns. 
  • Served any remaining coleslaw on the side.
