Cooking Steps

  • Before starting, preheat the broiler to high.
  • Wash and dry all produce.
  • Halve buns, then arrange, cut-side up, on an unlined baking sheet. Set aside.

  • Heat a large non-stick pan over high heat. 
  • Drain chicken. Spread out on a plate or flat surface, then season with Applewood Smoked Spice, salt and pepper.
  • When hot, add 1 tbsp (2 tbsp) oil, then the chicken. Cook, turning occasionally, until chicken is golden, 1-2 min.
  • Reduce heat to medium-high. Cook, stirring often, until chicken is cooked through, 3-4 min.**
  • Remove the pan from heat. Add BBQ sauce, then stir to combine. (TIP: Use two forks to break-up any larger pieces of chicken!)

  • Meanwhile, add mayo and half of the vinegar (use all for 4 ppl) to a medium bowl, then season with salt and pepper. Whisk to combine. 
  • Add coleslaw mix and cranberries to the bowl, then toss to coat. 
  • Broil buns in the middle of the oven for 1-2 min, until golden. (TIP: Keep an eye on them so they don't burn!)

  • Divide chicken mixture between bottom buns, then top with some coleslaw. 
  • Close bottom bun. 
  • Served any remaining coleslaw on the side.
