Cooking Steps

Prep

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • Thinly slice mushrooms.
  • Cut tomato into 1/4-inch pieces. 
  • To a large bowl, add half the vinegar, 1/8 tsp (1/4 tsp) sugar and 1/2 tbsp (1 tbsp) oil. Season with salt and pepper. Stir to combine. Place tomatoes and spring mix over top. Do not mix until step 4.
  • On an foil-lined baking sheet, arrange buns, cut-sides up. Sprinkle cheese over bottom buns.
Start sauce and prep beef

  • Heat a large pot over high. 
  • When the pot is hot, add 1 tbsp (2 tbsp) butter, mushrooms and onions. Season with salt and pepper. Cook for 3-4 min, stirring often, until tender.
  • Meanwhile, heat a large non-stick pan over high.
  • While the pan heats, line a plate with paper towels. Separate beef slices onto the prepared plate. Pat beef dry with paper towels, pressing to absorb as much moisture as possible.
Finish sauce and cook beef

  • Sprinkle Cream Sauce Spice Blend over mushrooms and onions. Stir to coat. Add broth concentrate and 1 cup ( 1 1/2 cups) water. Cook for 3-4 min, stirring occasionally, until sauce thickens slightly.
  • When the pan is hot, add 1/2 tbsp (1 tbsp) oil and beef. Cook for 1-2 min per side, stirring occasionally, until beef is golden and cooked through.** Remove from heat. Add remaining vinegar. Toss to coat.
  • Season with salt and pepper. 
Finish and serve

  • While beef cooks, toast buns in the top of the oven for 2-3 min, until cheese melts. (TIP: Keep an eye on buns, so they don't burn!)
  • Toss salad.
  • Top bottom buns with beef.
  • Using a slotted spoon, top beef with some of the mushrooms and onions. Sprinkle crispy shallots over top. Close with top buns.
  • Divide sandwiches, and salads between plates.
  • Serve remaining sauce alongside.
