Cooking Steps

Prep

  • Before starting, preheat the oven to 450˚F. Wash and dry all produce.
  • Cut zucchini in half crosswise, then into 1-inch wedges.
  • Cut tomato into 1/4-inch pieces. 
  • Roughly chop spinach.
Roast zucchini

  • To a parchment-lined baking sheet, add zucchini and 1 tbsp (2 tbsp) oil. Season with salt and pepper. Toss to combine.  
  • Roast in the middle of the oven for 15-17 min, flipping halfway through, until tender-crisp.
Cook beef

  • Heat a large non-stick pan over medium-high. When the pan is hot, add 1/2 tbsp (1 tbsp) oil, then beef and Shawarma Spice Blend. Season with salt and pepper.
  • Cook for 4-6 min, breaking up beef and stirring often, until beef is cooked through.**** 
Warm tortillas

  • Just before serving, wrap tortillas in paper towels.
  • Microwave for 30 sec-1 min, until tortillas are warm and flexible. (TIP: You can skip this step if you don't want to warm the tortillas!)
Finish and serve

  • Divide spinach, beef and zucchini between tortillas. 
  • Drizzle yogurt sauce over top.
  • Top with tomatoes and feta.

If you've opted for beef, heat a large non-stick pan over medium-high. When the pan is hot, add beef and Shawarma Spice Blend.  Season with salt and pepper. Cook for 4-6 min, breaking up beef into smaller pieces, until beef is cooked through.**
