Cooking Steps

Make couscous

  • Once water is boiling, remove from heat, then add couscous and veg stock powder. Stir to combine.
  • Cover and let stand for 5 min.
  • When couscous is tender, fluff with a fork.
Finish prep

  • Meanwhile, halve tomatoes. 
  • Zest, then juice lemon.
  • Peel, then mince or grate garlic. 
  • Roughly chop parsley.
  • Pick mint leaves from stem, then roughly chop. 
  • Halve eggs, then season with salt and pepper.
Make garlicky yogurt sauce

  • Add yogurt, 1/4 tsp lemon zest, 1/2 tsp garlic, 1 tsp lemon juice and 1 tsp water to a small bowl (NOTE: Reference garlic guide). Season with salt and pepper, then stir to combine. 
Finish and serve

  • Add parsley, tomatoes, remaining lemon zest and 1 tbsp oil to couscous. Season with salt and pepper, then stir to combine. 
  • Divide couscous between bowls. Top with eggs, then sprinkle with feta and mint. 
  • Dollop garlicky yogurt sauce over top.
