- Once water is boiling, remove from heat, then add couscous. Stir to combine.
Cover and let stand for 5 min.
When couscous is tender, fluff with a fork.
- Meanwhile, halve tomatoes.
- Zest, then juice lemon.
- Peel, then mince or grate garlic.
- Roughly chop parsley.
- Pick mint leaves from stem, then roughly chop.
- Halve eggs, then season with salt and pepper.
- Add yogurt, 1/4 tsp lemon zest, 1/2 tsp garlic, 1 tsp lemon juice and 1 tsp water to a small bowl (NOTE: Reference garlic guide). Season with salt and pepper, then stir to combine.
- Add parsley, mint, tomatoes, remaining lemon zest and 1 tbsp oil to couscous. Season with salt and pepper, then stir to combine.
- Divide couscous between bowls. Top with eggs, then sprinkle feta over top.
- Dollop garlicky yogurt sauce over top.
