Cooking Steps

Make couscous and prep

  • Before starting, preheat the broiler to high. Wash and dry all produce.
  • To a medium pot, add stock powder and 2/3 cup (1 1/3 cups) water. Season with salt and bring to a boil over high.
  • Once boiling, stir in couscous. Remove the pot from heat, then cover and set couscous aside for 5 min to rehydrate.
  • Core, then cut pepper into 1/2-inch slices
  • Cut tomato into 1/2-inch pieces.
  • Peel, then mince or grate garlic.
Roast peppers

  • Meanwhile, to a foil-lined baking sheet, add peppers and 1/2 tbsp (1 tbsp) olive oil. Season with salt and pepper, then toss to coat.
  • Broil in the top of the oven for 5-6 min, stirring halway through, until peppers are golden and tender-crisp.
Cook chicken

  • Meanwhile, heat a large non-stick pan over medium-high.
  • Pat chicken dry with paper towels. Cut into 1-inch pieces.
  • To a large bowl, add chicken, onions, Za'atar Spice and 1 tbsp (2 tbsp) olive oil. Season with salt and pepper, then toss to coat.
  • To the pan, add 1/2 tbsp (1 tbsp) olive oil and chicken-onion mix.
  • Cook for 8-10 min, turning occasionally, until golden and cooked through.**
  • Deglaze the pan with 2 tbsp (4 tbsp) water. Stir to combine. 
Make garlic mayo

  • While chicken cooks, to a small bowl, add mayo, garlic and 1/2 tbsp (1 tbsp) water. Season with salt and pepper. Stir to combine.
Finish and serve

  • Fluff couscous with a fork. Season with salt. (TIP: Add 1 tbsp (2 tbsp) butter for extra flavour!)
  • Divide couscous between bowls.
  • Top with roasted peppers, chicken-onion mixture and tomatoes.
  • Drizzle garlic mayo and pesto over top.
  • Sprinkle almonds over top.

If you've opted to get chicken breasts, pat chicken dry with paper towels, then cut into 1-inch pieces. Prepare and cook in the same way the recipe instructs you to prepare and cook diced chicken.
