Cooking Steps

1 COOK SWEET POTATO

Don't have a garlic press? Lay the garlic cloves on a chopping board, then place a chef's knife on top and press down firmly to crush. Finely chop the garlic.

Wash and dry all produce.* In a medium pot, combine sweet potatoes, 1 tsp salt (dbl for 4 ppl) and enough water to cover (approx. 1 inch). Cover and bring to a boil over high heat. Once boiling, reduce heat to medium. Simmer, uncovered, stirring occasionally, until potatoes are fork-tender, 10-12 min.

2 MAKE PATTIES

Meanwhile, peel, then mince or grate garlic. Finely chop 2 tsp rosemary leaves (dbl for 4 ppl). Cut stems off green beans, if needed. In a medium bowl, combine sausage, garlic, breadcrumbs, half the rosemary, 1/4 cup Parmesan (dbl for 4 ppl) and 1/4 tsp salt (dbl for 4 ppl). Season with pepper. Divide sausage mixture into 8 equal portions (16 equal portions for 4 ppl). Roll them into balls, then flatten them into 1/2-inch thick patties.

Heat a large non-stick pan over medium heat. When the pan is hot, add 1 tbsp oil, then patties. Cook, until golden-brown, 3-5 min per side. (TIP: Cook to a min. internal temp. of 71°C/160°F.**)(TIP: Cook in 2 batches for 4 ppl, using 1 tsp oil for each batch.) Remove pan from heat and transfer patties to a plate. Cover to keep warm. Carefully wipe the pan clean.

Heat the same pan over medium-high heat. When the pan is hot, add 1 tbsp oil (dbl for 4 ppl), then green beans. Cover and cook, stirring once halfway through cooking, until dark golden-brown, 3-4 min. Season with salt and pepper. Transfer to the plate with patties and cover to keep warm.

5 MAKE GRAVY

To the same pan, add another 1 tbsp oil (dbl for 4 ppl), then onions and remaining rosemary. Cook, stirring often, until onions soften, 2-3 min. Reduce heat to medium. Add 1 tbsp butter (dbl for 4 ppl) and sprinkle over flour. Stir together often, until a thick paste forms. Whisk in 3/4 cup water (dbl for 4 ppl) and broth concentrate(s). Cook, stirring often, until gravy thickens, 2-3 min.

6 FINISH AND SERVE

Drain sweet potatoes and return them to the same pot, off heat. Using a fork or potato masher, mash 2 tbsp butter (dbl for 4 ppl) into potatoes until smooth. Season with salt and pepper. Divide beans, patties and mash between plates. Drizzle over gravy.
