Cooking Steps

Prep and pickle onions

  • Preheat the oven to 450°F.
  • Wash and dry all produce.
  • Finely chop parsley.
  • Peel, then mince or grate garlic.
  • Peel, then cut onion into 1/4-inch slices.
  • To a medium microwaveable bowl, add 1 tbsp (2 tbsp) vinegar, 2 tbsp (4 tbsp) water, 1/2 tbsp (1 tbsp) sugar and a pinch of salt. (NOTE: This is your pickling liquid.) 
  • Microwave in 15 sec increments, stirring between each, until sugar dissolves. 
  • Add onions, then stir to combine.
Assemble roll-ups

  • To a large bowl, add beef, tomato sauce base, half the parsley, half the Middle Eastern Seasoning (use all for 4 servings) and 1/4 (1/2 tsp) salt. Season with pepper, then combine.
Prep roll-ups

  • Lay tortillas flat on a clean work surface. Spread beef filling evenly along the centre of each tortilla. (TIP: If there is too much filling, sprinkle the remainder over top of roll-ups!)
  • Roll up to close and place tortillas in the aluminum trays, seam-side down.
  • Brush 1/2 tbsp (1 tbsp) oil over tops.
  • Bake roll-ups in the middle of the oven for 12-14 min, until beef is cooked through.**
Make salad

  • Meanwhile, cut tomato into 1/4-inch pieces.
  • To a medium bowl, add 1/2 tbsp (1 tbsp) olive oil, 1/2 tbsp (1 tbsp) reserved pickling liquid and 1/4 tsp (1/2 tsp) sugar. Season with salt and pepper. Whisk to combine.
  • To the bowl, add spring mix, pickled onions, feta and tomato. Toss to combine.
  • To a small bowl, add garlic, 1 tsp (2 tsp) water and mayo. Season with salt. Whisk to combine.
Finish and serve

  • Let roll-ups cool for 2-3 min before serving.
  • Divide roll-ups between plates.
  • Top with salad
  • Drizzle garlic mayo over top.
  • Sprinkle with remaining parsley.
