One-Pan Turkey Dinner

with Mushrooms and Green Beans

This quick and comforting one-pan meal brings together tender turkey, hearty beans and earthy mushrooms in a rich and creamy thyme-infused sauce. Simmered with fluffy rice, it's a perfect balance of cozy and convenient, making it an easy weeknight favourite.

Cooking Steps

Prep

  • Before starting, wash and dry all produce. 
  • Trim green beans, then halve.
  • Quarter mushrooms.
Cook meat and veggies

  • Heat a large non-stick pan over medium-high. 
  • When the pan is hot, add 1 tbsp (2 tbsp) butter, turkey, onions and mushrooms. Cook for 4-6 min, breaking up turkey into smaller pieces, until no pink remains.** Season with salt and pepper.
Cook rice

  • Using a strainer, rinse rice until water runs clear. Add 1/2 tbsp (1 tbsp) oil, rice and thyme sprigs. Season with salt and pepper. 
  • Add cream, stock powder and 1 cup (2 cups) water. Bring to a boil over high.
  • Reduce heat to medium-low. Cover and cook for 10-12 min, stirring occasionally, until rice is tender and water is absorbed. 
  • Add green beans and 1/4 cup (1/2 cup) water. Cook for 3-4 min, stirring often, until green beans are tender and water is absorbed. 
Finish and serve

  • Carefully remove thyme sprigs and discard.
  • Add sour cream. Stir to combine.
  • Divide turkey mixture between plates.
