- When hot, add 1/2 tbsp (1 tbsp) oil, then mirepoix. Cook for 1 min, stirring occasionally, until beginning to soften.
- Add sausage. Cook for 4-5 min, breaking up sausage into smaller pieces, until no pink remains.** Season with salt and pepper.
- Add garlic, crushed tomatoes, Zesty Garlic Blend, stock powder and 3 1/2 cups (7 cups) water. Stir to combine. (NOTE: Scrape any browned bits from the bottom of the pot, this will add flavour!) Season with salt and pepper.
- Cover and bring to a boil over high.
- Once soup comes up to a boil, add tortellini. Cook for 2-4 min, stirring occasionally, until tender but still firm to the bite.
- Reduce heat to medium. Stir in cream and spinach. Cook for 1 min, stirring often, until spinach wilts. Season with salt and pepper.
- Divide soup between bowls.
- Sprinkle Parmesan over top.
